So I added the beet to the chili after all


Since I was going in a Cincinnati direction with the chili spices--cinnamon, cocoa, coffee--and those are flavors that beets can work with (have you ever had beet chocolate cake? It's pretty good.), I decided what the heck and tossed it in. It's not bad. Really, it's too mild to make much of an impact against all those other strong flavors, but it adds a little sweetness and a little tartness missing from the mix otherwise. Also, the beets do make a contribution texturally. I used beef shanks so I have shreds of meat instead of chunks; the beet bits are the only component with any bite to them.

Upon consideration, I've decided that I should have pickled the beets first. Then I'd really have something.

CSA leftovers - The last of the winter produce

Both the black sapote in pantry and the tomatoes in my garden are insisting on rotting instead of ripening so I haven't made the dishes I was hoping to have made by now. And that leaves me without the interesting posts that would have results.

Instead, since it seems I feel compelled to post something, here's a couple of less interesting dishes I've made recently. These feature the leftover turnips and beets from the last few weeks of the CSA. I thought they'd last longer in the refrigerator, but they started getting squishy pretty quickly. Maybe it was because of the leaky water jug that boosted the humidity. Whatever the reason, using them promptly seemed prudent.

First, we've got roasted chicken with turnips. Roasting chicken with root vegetables is pretty standard, but here, following a Bittman recipe, I surrounded the chicken with fairly thinly sliced turnips about halfway through cooking and then, after this photo was taken, finished them up under high heat while the chicken was resting. No picture of the finished dish as it turned out unpresentably beige. It's because I finally found a chicken under three pounds to roast. It's good that I finally had a sensible amount of meat, but bad that it cooked through before anything had a chance to brown up crispy. Still, unlike the other times I've cooked chicken with chunks of potatoes or carrots or whatever, the thinly sliced turnips cooked through and picked up a lot of good flavor from their swim in the drippings. A bigger pan and a longer cooking time is all they really would need to be something special.

Second up is pickled beets. There are lots of variations on pickled beet recipes out there suggesting a lot of different techniques. There were a couple elements that seem important to me: a)roast the beets instead of boiling them. This concentrates the flavor and leaves the vegetable cells ready to soak up the pickling brine instead of saturated with unflavored water, and b)keep the seasoning simple to let the flavor of the beets come through. I used white and white wine vinegar and a tarragon herb blend along with a fair amount of sugar and just a little salt. I had salted the beets before roasting already, mainly to just draw out the moisture. I also layered the beets with sliced onion and threw in a couple eggs since, apparently, that's what you do when you're pickling beets. It's early days yet, but signs are pointing towards tasty.

CSA week 20 - Beet, dandelion and potato gratin

I think this is officially the last of the CSA dishes for this year. Well, I've got some turnips left, but two weeks after the last delivery is probably a good place to stop counting. I think I'll do a full wrap-up post for the year some time this weekend after I've thought it over for a bit.

I was hoping to do something with the dandelion greens separately--a Sephardic soup--but I wasn't able to find the Spanish-style corned beef or kosher chorizo to do it up right.

I think the dandelion greens will have a good home here. I found a few beet gratin recipes that used mustard greens and dandelion is a fair approximation.

I'm using potatoes as well in emulation of a recipe by Chef Lance Barto from the restaurant Strings in Denver. When I found his recipe I liked how he layered the two separately for a two-tone effect. And since I've got a few extra potatoes in the pantry to get rid of, why not give it a try?

As isn't unusual with semi-improvised recipes, this didn't work out perfectly and there are lots of possibilities for improvements. I'm just going to tell you what I did instead of writing up some imaginary version; you can adjust as you see fit.

Ingredients:
1 bunch dandelion greens
2 teaspoons olive oil
4 cloves garlic, finely minced
1 handful parsley, cleaned and chopped
3 medium beets, peeled and thinly sliced
3 medium potatoes, peeled and thinly sliced
2 cups cream
1 cup milk
6 ounces goat cheese
3 ounces Parmesan cheese
salt, pepper and fines herbes to taste (or tarragon and chervil if you don't have a fines herbes blend)
good quality mild red wine vinegar

Step zero, preheat the oven to 350 degrees.

I blanched the dandelion greens in boiling water for 3 minutes. Let them cool, then chopped roughly. Then I heated the oil in a medium pan over medium high heat, added the garlic and greens and cooked until aromatic and tender. Moved them to a bowl, let cool and mixed with the parsley.

Nex I heated up the cream and milk in the same medium pot I blanched the greens in. While it was heating I added the goat cheese, forcing it through a slotted spoon to break it up. And I used my microplane to finely grate in 2 ounces of Parmesan cheese. I also added the salt, pepper and herbs at this point. Vigorous stirring and a couple minutes of simmering dissolved most of the cheese but it was still a bit lumpy.

Then I layered the beets on the bottom of the baking dish. My slices were very thin so I got five layers or so out of it.

The dandelion mixture went on next. And the potatoes over that.

I poured the cheese mixture over top, shook and tapped to get out air bubbles and lifted up the edges a bit to get it to seep down through the strata.

45 minutes at 350 degrees with foil over top then I removed the foil, forgot to check the potato for doneness, grated on more Parmesan and topped with a layer of panko bread crumbs. Then back into the oven for another 8 minutes to get it browned and crispy on top. That didn't do the trick but 2-3 more minutes under the broil did.

After 10 minutes of resting, it was time to slice out a piece. The potatoes and beets were a little underdone so back into the oven for 15 minutes. No real change so back for another 20. I'd recommend baking at 400 degrees to try to speed things up if you make this.

OK, after all that baking, I'm really hungry and it's finally ready.
The sauce didn't thicken up much, though. Not enough cheese dissolved in it and nothing absorbant in the solids. I should have added a few eggs in there. The liquid sauce carries the red tint around too so that screws up the cool presentation I was hoping for. Well, it's sort of there. A smaller, deeper pan would have emphasized it more.

Visual aesthetics aside, it tastes great. The potato is pretty much filler, but the combination of the softly sweet beets and salty creamy cheese sauce accented by the garlicy greens and toasty crisp topping is pretty fabulous. A few drops of vinegar adds a tang that brings out the beets flavor and cuts through the fattiness. I can see why so many beet and goat cheese recipes use it. It's a very nice added touch.

The flavors were best a bit before the potato got to the texture I wanted so, if you're going to try making it, best to leave it a little al dente. Also beware the dreaded pink drips of irrevocable staining.

This needs a little more work, but it's definitely in the right neighborhood and good enough to be worth perfecting. I wonder how replacing the potatoes with turnips or radishes would work.

CSA week five - Roast chicken and beets

This is pretty simple, but it's one more iteration in my roast chicken series and I wanted to get it down on the record. Last time I roasted a chicken (the Hamersley's Bistro recipe before the Moroccan and boneless fried chickens), I smeared it with an herb paste that didn't do a great job in flavoring it and mostly just fell off. This time I stuffed the paste under the skin--actually I simplified it down to a parsley and thyme butter--and seasoned the outside Zuni Café style with a seasoned salt and let it sit in the refrigerator overnight.

Both the Hamersley and the Zuni recipe keep the chicken unbutchered but I decided to butterfly it. I'm also roasting the beets and, since I'm not wrapping them in foil as a lot of recipes call for (since I want the chicken drippings to add a bit of flavor to them), I wanted to spread the chicken out over top to shield them from the direct heat. I stuffed a few lemon slices in between too.

I used the America's Test Kitchen roasting method: forty minutes at 500 degrees, turning the pan halfway through. That finished the chicken just right, but the beets needed another ten minutes to get to the soft texture I was looking for.

I'm pleased with the chicken. It's a touch less succulent than the best results I've gotten before, but it is flavored nicely throughout which previously recipes that only seasoned over the skin didn't manage. The skin isn't quite as nice as the previous best either, but I think second night resting in the refrigerator before roasting would help with that. The black pepper in the outer seasoning did burn a little so I think I'll avoid that in the future and maybe use the slightly lower temperature of the Zuni method.

I still like the boneless pan frying method best, but it's good to have the oven hot on a cold night like tonight.

The beets turned out well too, but the chicken basting didn't help really. The best flavor was the pure sweet beet on the inside and the slightly crispy caramelized stumps where the tops were cut off. Maybe I should have peeled them. Are you supposed to peel beets before you roast them? I think that would let flavors penetrate better.

CSA week mainly 18 - Fragrant beetroot and vegetable soup with spiced lamb kubbeh

This is a recipe from the cookbook Sephardic Flavors by Joyce Goldstein. It comes from the Jewish community that used to be in Cochin in south India. Now they're nearly all in Israel or New York City.

While poking through the other cookbooks my sister brought to Passover I found a surprisingly similar (if rather simpler) recipe for a beet soup with meat dumplings from Iraq called Kukkah Adom. A quick search online turns up that at least one family of the Cochin community emigrated from Iraq so this must come from that tradition.

Ingredients:
1 Tablespoon vegetable oil
1/2 onion, finely chopped
6 garlic cloves
1 carrot, diced [or two of the small CSA ones]
1 zucchini, diced [the pieces of zucchini I froze defrosted a little mushy, but otherwise intact]
1/2 celery stick, diced
4-5 cardamom pods [I seem to be out of whole cardamom so I used the powder]
1/2 teaspoon curry powder
4 vacuum-packed beet root, finely diced and juice reserved
[I've never seen a vacuum-packed beet so I have no idea how big they are. I used the full 1 1/2 pounds of CSA beets which, in retrospect, was way too much. I presume the packed beets are pre-cooked, given how they're used in this recipe, so I simmered my raw beets for 20 minutes. The picture in the cookbook had rather large pieces of beet so I went with that. If you go for the fine dice, 10 minutes will probably do. Also, I substituted 1 cup of the boiling water for the packed beet juices.]
4 cups vegetable stock
[or 2 cups beet boiling water and 2 cups chicken stock]
14 oz can chopped tomatoes
3-4 Tablespoons chopped cilantro
2 bay leaves
1 Tablespoon sugar
salt and pepper
1-2 Tablespoons white wine vinegar, to serve

for kubbeh:
2 large pinches of saffron threads
1 Tablespoon hot water
1 Tablespoon vegetable oil
1 large onion, chopped
9 oz lean minced or ground lamb
1 teaspoon vinegar
1/2 bunch fresh mint, chopped

1 cup plain flour (semolina better)
1-3 pinches salt
1/2 - 1 teaspoon turmeric
4-8 Tablespoons cold water

for ginger and cilantro paste:
4 garlic cloves, chopped
1-1 1/2 Tablespoons chopped fresh ginger
1/2 - 4 fresh mild chillies
1/2 large bunch fresh cilantro [stems included since you're going to puree everything]
2 Tablespoons white wine vinegar
salt
extra virgin olive oil

1. To make paste, put garlic, ginger and chillies in food processor and process. Add rest, process to puree. Start with a little olive oil and add more with processing until you get a nice smooth texture. Set aside.


2. To make kubbeh filling, place saffron in hot water and leave to infuse. Heat oil in pan and fry onion until soft. Put onion and and saffron water in food processor. Blend. Add lamb, season and blend. Add vinegar and mint. Chill.




3. To make kubbeh dough, mix flour, salt and turmeric. Add water until it forms a slightly sticky but still workable dough. Let rest 20 minutes Knead for 5 minutes, wrap in plastic and let stand 30 minutes.




4. Divide dough into 10 - 15 pieces. Roll each into ball then roll into thin rounds. Place a spoonful of filling in each, dampen the edges, fold over or bundle up to seal. [I started by bundling up, but as I kept going along, I found myself doing more of an envelope fold and making flat square packets.] Set aside on a floured surface. [I made 12 pieces and found I had a third of the filling leftover. I'm not sure what went wrong there. Maybe my onion was too big? I made a dozen meatballs with the extra.]

5. To make soup, heat oil in pan, add onion and fry for 10 minutes until soft but not brown. Add half the garlic, the carrot, zucchini, celery, cardamom and curry. Cook 2-3 minutes.

6. Add three quarters of the diced beetroot, the stock, tomatoes, cilantro, bay leaves and sugar. Bring to boil, reduce heat and simmer for 20 minutes.

7. Add remaining beetroot, juice and garlic. Season to taste and set aside.

8. To serve, reheat soup and poach dumplings in salted water for 4 minutes. For each bowl, add a dash of vinegar, two or three dumplings [or a dumplings and three meatballs] and a small spoonful of the paste.


OK, this is a strange combination of flavors and they're not immediately gelling into a whole.

The broth is sweet from all that beet water, but not cloying. There's a lot of savory and acid in there too. And heat floating in from the cilantro paste. You can taste the beets and tomatoes in it, both mellowed. The herbs and spices do make it fragrant so the name is accurate enough.

The twenty minutes of cooking wasn't enough to cook the character out of the vegetables. All of them, even the canned tomatoes, keep their individual flavors and textures. Well actually, the beets that cooked for the twenty minutes taste just like the broth now so putting some more in at the end makes sense.

I've tried different combinations of the ingredients and I've decided I like everything but the mint. Maybe if there was just a lot less of it. Mint's supposed to go with lamb and beets, but it's just jumping to the fore and clashing with everything. Or at least with the tomatoes. That definitely doesn't work at all. If you get a piece of kubbeh without much mint, it's not bad at all. It's actually not far off from Ashkenazi kreplach so maybe heavy meat dumplings are a universal of Jewish cooking. The soup itself, when you get used to it, is not a bad chunky vegetable soup with some interestingly unusual flavors, particularly with the cilantro paste added. Not something I'd seek out, to tell the truth, but if you're a vegetable soup fan, worth a try. Maybe it'll be better after a night in the refrigerator for the flavors to meld.

OK, it's tomorrow and I'm trying a bowl without the kubbeh. Just plain, without the cilantro paste, it's extra-sweet vegetable soup. No big deal. With the paste it's a lot more interesting with an odd, but not bad combination of flavors. Oh, I forgot to add the vinegar. ... Now that makes more sense. The tart balances out the sweetness into a more unified whole. It's actually good now.
Hold on again, I'm going to boil up a kubbeh. ... I'm still not sold on the mint, but the acid tones it down a bit so it kind of works. I'm still tempted to open up the kubbeh and extract the mint with tweezers, though.

I strongly considered switching out the mint for something I liked more, but I wanted to make such an unusual recipe as written. But having done that, I have no idea if it tastes anything close to what it's supposed to. And how many people on the planet could answer that? A few thousand? Maybe I should just please myself.
